Le gâteau noir

All my cakes are handmade with passion for an intense pleasure. I only use top quality ingredients and all my pastries require a long baking process to reach those special and unique flavours and  taste. If you have any specific requests or wishes, just contact me. Attention: given the persistent restrictions due to the pandemic, some ingredients could experience unpredictable shortages.

My cakes are confectioned only after the order is received. Therefore each creation must be ordered in advance, as reported in the description. Actual finishings  may vary depending on available time and inspiration. Payment options: cash on delivery, wire transfer or Twint. The activity is regularly registered at the Hygiene Inspectorate and complies with cantonal regulations.

Attention: all my cakes are baked in a common household kitchen (smoke and pets free). Consequently, all sort of food allergens can potentially be found. If you have any doubts, please contact me. Some cakes are also available with no lactose. Ask me for more information and prices. Eat sugar responsibly.

Hazelnut Cream

We are proud to launch the first hazelnut cream from Le Gâteau Noir. Made with 45% of Tonda Gentile Trilobata hazelnuts, reputed the best in the world, from Langhe region in Italy. Slightly salted to enhance the flavour. Confected with the highest quality chocolate, to deliver an extraordinary gourmet journey, with a combination of taste and texture you never experienced before. The ideal treat for yourself or your family and friends.

Give it a good stir before tasting and store in a fresh place (not in the fridge), and protected from light. The net weight of each jar is 200 g, and costs 9 CHF.

 

Eclairs

Among the favourite pastries in France, éclairs will surprise you with the richness and contrast of flavours and consistencies. Two very particular flavours are available in our on-line boutique: 1) Handmade choux pastry, filled with a delicate lemon ganache, lime and lemon gel with mint, and italian meringue on the top. 2) Handmade choux pastry filled with vanilla mousseline cream and a thin crunchy chocolate layer, and a superb and unique slightly salted hazelnut-based mousseline cream on the top.

We only use “tonda gentile delle Langhe” hazelnuts, generally reputed as the best ones. The minimum order is 6 éclairs (one single flavour) at the cost of 45 CHF. Each supplementary tart costs 6 CHF. They must be ordered at least 2 full days in advance. If you are interested in bigger orders, contact me for any information.

Hazelnut and Pecan Cookies

A new delicacy coming with spring: hazelnut and pecan soft cookies. “Tonda gentile delle langhe” hazelnuts provide a unique scented taste. A real sin of gluttony. The elegant package weighs about 250 g, and costs 12 chf. It must be ordered at least 2 days in advance.

Gianduia Mon Amour

Gianduia is the magic mix of chocolate and hazelnuts. I only use a cocoa-rich (more than 40%) milk chocolate to create a perfect  flavoured combination that will satisfy your palate. A powerful, yet delicate, gianduia mousse comes with two different gelées: a first layer made of bluberries, and the second one of  raspberries. The cocoa crispy sugar dough at the bottom is filled with a gianduia based ganache montée. Topping and finishing may vary in function of the season, and inspiration.

The diameter of the cake is 20 cm, about 10-12 portions, at the cost of 77 CHF. Given its complexity, it must be ordered at least 5 days in advance.

Sublime à la Pistache

Are you ready for an extraordinary sensory journey?! 7 different layers to awake all your senses and make you dive in a new world of pleasures: crispy sugar dough, salted butter caramel, pistachio financier, pistachio mousseline cream, very fine pistachio mousse, orange crémeux, and shiny pistachio icing. 7 layers, 7 different consistencies, many ways to savour pistachio. Just sublime! Inspired by the pastry chef Valerio Barralis.

Easter Eggs

Easter is coming, and our chocolate eggs are ready to melt in your mouth and satisfy your “gourmet” palate. We only use the finest Belgian chocolate, and they come in three different versions: milk (40% cocoa), dark (70% cocoa) and white chocolate. Each egg can include your personalized surprise for your beloved ones, or, in alternative, you will find a little taster of a chocolate creation. The underneath support is only for illustration purposes and is not sold with eggs.

Book yours, and surprise your family and friends with such a particular and unique design, paired with a top class chocolate. Each egg costs 40 CHF; 45 CHF with velvet effect. Available colours are red, orange, yellow and cocoa. Each egg comes with its own beautiful packaging. You can choose the colour of the ribbon: green, red, blue, violet or white to personalize such an object. Petits Chocolats

Are you looking for a nice and tasteful Christmas present for your friends and acquaintances? Look no further. Here it is a lovely idea, which will certainly get you their smiles. These pralines are made from the finest Belgian chocolate: white, dark and milk chocolate

Each package weighs about 100 g and contains pralines from the three different chocolates. If you wish you can select a single type of chocolate. Cost: 8 CHF. Must be ordered at least 3 days in advance.

Délice Framboise-Vanille

You prefer a fruit-flavoured cake?! This is the right one for you: a sugar dough filled with a super delicate raspberry mousse, a second layer of vanilla mousse and on the top geometrical shapes made of raspberry “coulis”. Some of those shapes are garnished with fine white chocolate. An elegant mix of flavours for an intense experience.

The cake is available only in the following size: about 20×20 cm, 9 portions, at the cost of 55CHF. Must be ordered at least 5 days in advance.

 

Pastiera Napoletana

This is not a French cake. It comes from the Neapolitan tradition and is one of the tastiest cake in the world. A particular crispy sugar dough filled with wheat and ricotta cheese, and flavoured with candied fruits and orange blossom. A very complex, though delicate, mix of savours. Divine!

The cake is available in the following sizes: about 24cm diameter, 10 portions, 55CHF; about 28cm diameter, 14 portions, 72CHF. Must be ordered at least 5 days in advance.

Millefeuille

A crispy and melting pure butter handmade puff pastry Millefeuille. A mix of flavours and different consistencies which will provide your mouth with a unique sensation. Two fillings are available: 1) a delicate vanilla mousseline with an intense chocolate “crémeux” or 2) a hazelnut-based slightly salted mousseline cream, with hazelnut slightly salted praliné and an intense chocolate “crémeux”. It requires several days to be baked and reach such a complexity.

The product is available as a single tart (surface about 12×20 cm, 6-8 portions) at 70 CHF for the mousseline version and at 80 CHF with the hazelnut filling. For a larger size, and if you would prefer different toppings and fillings, please contact me. Must be ordered at least 5 days in advance. Given the handmade nature of the puff pastry, I strongly suggest you to ask for the cake to be ready on the day you intend to eat it. You will then savour it at its best.

Tarte Infiniment Pistacchio

If you like pistachio, this is the cake for you: a crispy sugar dough filled with a tasteful and intense pistachio cream and a pistachio flavoured dacquoise, for an alternation of nuances and consistencies, which will melt in your mouth. A pure pleasure!

The cake is available in the following sizes: about 20cm diameter, 8 portions, 45 CHF; about 22cm diameter, 10 portions, 55 CHF; about 26cm diameter, 14 portions, 65 CHF. Must be ordered at least 3 days in advance.

Jaffa Cakes

A crispy chocolate sugar dough filled with bitter orange marmalade and almond cream. On the top, a dome of intense chocolate mousse. Different flavours for an irresistible mix which will melt in your mouth.

The product is available as individual tarts (diameter about 7 cm). The smallest order corresponds to 4 tarts at 40 CHF, and each supplementary tart costs 7 CHF. Or as a large cake (diameter about 22 cm, 12-16 portions) at 65 CHF. Must be ordered at least 5 days in advance.

Macarons

Ah, les macarons Parisiens…Meringue and almond based biscuits filled with different flavour ganaches and creams. A unique and precious dessert to make each of your moments unforgettable. A real sin of gluttony. You won’t stop after the first one!

The following flavours are available: lemon, salted butter caramel and pistachio. New flavours will come soon. Diameter of each macaron about 4cm. Minimum order: 15 macarons at 25CHF (one single flavour) or 30 macarons at 45 CHF (two flavours possible). Must be ordered at least 7 days in advance.

Tarte au Citron Meringuée

A French irresistible classic. A crispy lemon-flavoured sugar dough, filled with an intense lemon cream, and covered with a delicious Italian meringue. The intensity of the lemon cream and the softness of the meringue perfectly mix and will make you discover a whole new world of flavour and pleasure.

The cake is available in the following sizes: about 20cm diameter, 8 portions, 45 CHF; about 22cm diameter, 10 portions, 55 CHF; about 26cm diameter, 14 portions, 65 CHF. Must be ordered at least 3 days in advance.

Tarte au Chocolat et au Caramel au Beurre Salé

A crispy sugar dough filled with salted butter caramel and chocolate fondant cream. The chocolate and the salted caramel create such a unique and smooth texture and flavour: the strong but delicate character of the 70% cocoa chocolate cream will blow up in your mouth; the salted caramel will make the feeling special. You will never forget your first bite!

The cake is available in the following sizes: about 20cm diameter, 8 portions, 45 CHF; about 22cm diameter, 10 portions, 55 CHF; about 26cm diameter, 14 portions, 65CHF. Must be ordered at least 3 days in advance.

Carrement Chocolat

Chocolate-moelleux base, with a dome of intense 70% cocoa chocolate mousse, with a powerful hazelnut-based cream heart. The softness of the base and the fondant mousse will give you a profound pleasure that will wake up all your senses. A revisited delicious recipe by the legendary French patissier Pierre Hermé.

The product is available as individual tarts (about 7cm diameter, minimum order: 4 tarts for 40 CHF, each supplementary tart 7 CHF) or as a large squared cake: about 18cm-long side, 10-12 portions, 55 CHF, or about 24cm-long side, 16-18 portions, 72 CHF. Must be ordered at least 5 days in advance.
